Ingredients
  

For the salad:

  • 2 cups chopped cooked chicken breast
  • 2 medium avocados diced
  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup sliced almonds
  • 4 cups mixed greens

For the dressing:

  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions
 

  • In a large mixing bowl, combine the chicken, diced avocados, red onion, cilantro, and sliced almonds.
  • In a small bowl, whisk together the olive oil, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper until well combined.
  • Pour the dressing over the chicken avocado salad and toss to coat.
  • Divide the mixed greens among four plates and top each with the chicken avocado salad.
  • Serve immediately and enjoy your delicious keto lunch!

Notes

You can also add other keto-friendly ingredients like cherry tomatoes, cucumbers, or feta cheese to your salad for added flavor and nutrition.
