Keto Chicken Avocado Salad
For the salad:
- 2 cups chopped cooked chicken breast
- 2 medium avocados diced
- 1/2 cup diced red onion
- 1/2 cup chopped fresh cilantro
- 1/4 cup sliced almonds
- 4 cups mixed greens
For the dressing:
- 1/4 cup extra-virgin olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- In a large mixing bowl, combine the chicken, diced avocados, red onion, cilantro, and sliced almonds.
- In a small bowl, whisk together the olive oil, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper until well combined.
- Pour the dressing over the chicken avocado salad and toss to coat.
- Divide the mixed greens among four plates and top each with the chicken avocado salad.
