
Zucchini Slaw
Ingredients
- 1 1/2 cups grated zucchini
- 1/2 cup flat-leaf parsley, chopped
- 2 Tbs shallots, finely chopped
- 2 Tbs fresh oregano, chopped
- 2 Tbs extra-virgin olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 1/2 Tbs red wine vinegar
- 1 1/2 cups cherry tomatoes, halved
Instructions
- In a bowl, combine oil, salt, pepper and vinegar.
- Add tomatoes, zucchini, parsley, shallots and oregano. Toss to combine. Serve.
