1 large red bell pepper, cut into bite size pieces
1/4 cup olive oil
1 teaspoon chopped fresh oregano
1/4 teaspoon kosher salt
1 tablespoon white wine vinegar
1 tablespoon fresh lemon juice
2 teaspoons Dijon mustard
1/4 teaspoon black pepper
4 cups chopped romaine lettuce
2 cups chopped English cucumber
1 cup halved cherry tomatoes
2 tablespoons pitted kalamata olives, chopped
1 (15-oz.) can unsalted cannellini beans, rinsed and drained
1/4 cup feta cheese, crumbled
Instructions
In a large bowl, combine the olive oil, vinegar, lemon juice, and mustard. Whisk well. Whisk in 1 teaspoon oregano, 1/4 teaspoon salt, and black pepper.
Add red bell pepper, lettuce, cucumber, tomatoes, olives, and beans to bowl; toss well.
Divide salad among 4 plates; top evenly with cheese. Serve.
