1 1/2 cups grated zucchini
1/2 cup flat-leaf parsley, chopped
2 Tbs shallots, finely chopped
2 Tbs fresh oregano, chopped
2 Tbs extra-virgin olive oil
1/2 tsp salt
1/4 tsp black pepper
1 1/2 Tbs red wine vinegar
1 1/2 cups cherry tomatoes, halved
Instructions
In a bowl, combine oil, salt, pepper and vinegar.
Add tomatoes, zucchini, parsley, shallots and oregano. Toss to combine. Serve.
