4-6 boneless skinless chicken breasts ; cut into cubes
2 tablespoons Extra virgin olive oil
1/2 tsp paprika
1/2 tsp rosemary
1/4 tsp thyme
1 tsp garlic powder
1 cup chicken broth
1 head Broccoli ; cut into florets
4 oz cream cheese
2 cups cheddar cheese
salt/pepper ; to taste
Instructions
Add chicken, EVOO, paprika, rosemary, thyme, garlic powder, a pinch of salt and pepper into the slow cooker; place lid on.
Cook on low for 4 hours or high for 2 hours or until chicken is cooked/fork tender. In the last hour, add in broccoli.
Add in cream cheese and cheddar cheese then stir to combine all ingredients.
Taste and add additonal salt/pepper as needed - Serve hot
Place contents of slow cooker into a casserole dish and top with extra cheese. Broil on low for a couple minutes until cheese is bubbly and begins to brown.
