3 to 4 tablespoons hazelnut oil, or melted coconut oil or with avocado oil
1/3 cup cocoa powder (you can substitute with unsweetened cocoa powder)
1/3 cup confection Swerve Sweetener (or your favorite natural sweetener)
2 teaspoons vanilla extract
Pinch salt
1/4 cup of skim milk
Instructions
In a food processor or high powered blender, adding one cup at a time, grind hazelnuts until finely ground and beginning to clump together.
Add 2 tablespoons oil and continue to grind until nuts smooth out into a butter.
Add cocoa, sweetener, vanilla, and pinch of salt.
Blend until well combined.
Add half of the skim milk. Blend. Continue adding until desired consistency is achieved.
Taste mixture. Add more of any of the ingredients until desired taste is achieved. If happy stop here and enjoy.
If the mixture is very thick, add additional tablespoon(s) of oil.
Recipe Notes
**If you are using raw hazel nuts, simply spread on a baking sheet and bake at 350F for 10 minutes or until lightly golden. Allow hazelnuts to cool, then rub the hazelnuts with your fingers to remove most of the husk. Some of it will not come off and that's okay, just grind it all up. If you live near Trader Joe's or other retailer, consider purchasing already roasted hazelnuts to save some time. I still roast them but just for a few minutes. The heat releases the flavor in the hazelnut and they blend up better in the food processor.
Store in the fridge in an airtight container for a few weeks.
