Instructions
For the Sesame-Crusted Tuna:
Season the tuna steaks with salt and black pepper.
In a shallow dish, combine the black and white sesame seeds. Press the tuna steaks into the sesame seeds, coating both sides evenly.
Heat vegetable oil in a skillet over high heat. Once the oil is hot, carefully add the sesame-crusted tuna steaks.
Sear the tuna for about 1-2 minutes on each side for rare to medium-rare, depending on your preference. Cooking time may vary based on the thickness of the tuna steaks. Remove from heat and set aside.
For the Green Tea Noodles:
Cook the green tea noodles according to the package instructions, then rinse them under cold water and drain.
In a small bowl, whisk together soy sauce, rice vinegar, honey, minced ginger, minced garlic, and sesame oil to make the dressing.
In a large mixing bowl, combine the cooked and cooled green tea noodles with the julienned cucumber, carrot, and sliced green onions.
Pour the dressing over the noodle and vegetable mixture and toss well to combine, ensuring the noodles are coated evenly.
To Serve:
Slice the sesame-crusted tuna steaks into thin strips.
Divide the green tea noodles among serving plates and top them with the sliced sesame-crusted tuna.
Garnish with toasted sesame seeds and, if desired, fresh cilantro and lime wedges.
