Easy 5 Ingredient Lemon Bars

This video is going to show you how to make lemon bars with oatmeal crust.

These light and creamy lemon bars are healthy treat you can’t resist.

They’re naturally sweetened, has no butter and no flour, but still great in texture.

HEALTHY LEMON BARS RECIPE

Ingredients:

For crust:
1 cup ground oats (or oat flour) (100g)
1/4 cup honey (85g)
1/4 cup coconut oil (50g)

For filling:
5 large eggs
1/2 cup honey (170g)
1/2 cup lemon juice (120ml)
1 tbsp lemon zest
1/3 cup ground oats (or oat flour) (35g)

Preparation:
For the crust: in the bowl, combine the ground oats, softened coconut oil and honey. Mix with the fork until the dough just comes together.

In a lined 8 by 8 inch (20 by 20 cm) baking pan spread the oat mixture, pressing with the fingers around the corners.

Bake at 350F (180C) degrees for 10 minutes. Let it cool until you make the lemon filling.

For the filling: in another bowl, beat your eggs, then add the honey, lemon juice, lemon zest and ground oats. Mix until well combined.

Pour the egg mixture over the oatmeal crust and bake at 350F (180C) degrees for 20-25 minutes, until set but still soft when gently touched.

Let it cool for 1 hour at room temperature, then place the baking pan into the fridge for 3-4 hours.

Cut in 9 equal squares (or 16 if you want smaller pieces).

Dust with the powdered sweetener, if you wish.

    Hello! I’m an 11 year old girl that loves to bake and these lemon bars are the best thing I have ever had! I usually don’t have a lot of things in the fridge and eat on the healthier side and I still had all of the ingredients! I prefer not waiting for them in the fridge, instead me and my family just eat them out of the oven, the best!
