Creamy Slow Cooker Chicken with Broccoli and Cheese
Ingredients
- 4-6 boneless skinless chicken breasts ; cut into cubes
- 2 tablespoons Extra virgin olive oil
- 1/2 tsp paprika
- 1/2 tsp rosemary
- 1/4 tsp thyme
- 1 tsp garlic powder
- 1 cup chicken broth
- 1 head Broccoli ; cut into florets
- 4 oz cream cheese
- 2 cups cheddar cheese
- salt/pepper ; to taste
Instructions
- Add chicken, EVOO, paprika, rosemary, thyme, garlic powder, a pinch of salt and pepper into the slow cooker; place lid on.
- Cook on low for 4 hours or high for 2 hours or until chicken is cooked/fork tender. In the last hour, add in broccoli.
- Add in cream cheese and cheddar cheese then stir to combine all ingredients.
- Taste and add additonal salt/pepper as needed - Serve hot
- Place contents of slow cooker into a casserole dish and top with extra cheese. Broil on low for a couple minutes until cheese is bubbly and begins to brown.
