Creamy Slow Cooker Chicken with Broccoli and Cheese

Ingredients
  

  • 4-6 boneless skinless chicken breasts ; cut into cubes
  • 2 tablespoons Extra virgin olive oil
  • 1/2 tsp paprika
  • 1/2 tsp rosemary
  • 1/4 tsp thyme
  • 1 tsp garlic powder
  • 1 cup chicken broth
  • 1 head Broccoli ; cut into florets
  • 4 oz cream cheese
  • 2 cups cheddar cheese
  • salt/pepper ; to taste

Instructions
 

  • Add chicken, EVOO, paprika, rosemary, thyme, garlic powder, a pinch of salt and pepper into the slow cooker; place lid on.
  • Cook on low for 4 hours or high for 2 hours or until chicken is cooked/fork tender. In the last hour, add in broccoli.
  • Add in cream cheese and cheddar cheese then stir to combine all ingredients.
  • Taste and add additonal salt/pepper as needed - Serve hot
  • Place contents of slow cooker into a casserole dish and top with extra cheese. Broil on low for a couple minutes until cheese is bubbly and begins to brown.
