  • 2 tablespoons white sesame seeds

For the Green Tea Noodles:

  • 8 ounces green tea soba noodles or any preferred green tea noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon fresh ginger minced
  • 1 clove garlic minced
  • 2 tablespoons sesame oil
  • 1/2 cup cucumber julienned
  • 1/2 cup carrot julienned
  • 1/4 cup green onions sliced
  • 1 tablespoon toasted sesame seeds for garnish
  • Fresh cilantro and lime wedges optional, for garnish

Instructions
 

For the Sesame-Crusted Tuna:

  • Season the tuna steaks with salt and black pepper.
  • In a shallow dish, combine the black and white sesame seeds. Press the tuna steaks into the sesame seeds, coating both sides evenly.
  • Heat vegetable oil in a skillet over high heat. Once the oil is hot, carefully add the sesame-crusted tuna steaks.
  • Sear the tuna for about 1-2 minutes on each side for rare to medium-rare, depending on your preference. Cooking time may vary based on the thickness of the tuna steaks. Remove from heat and set aside.

For the Green Tea Noodles:

  • Cook the green tea noodles according to the package instructions, then rinse them under cold water and drain.
  • In a small bowl, whisk together soy sauce, rice vinegar, honey, minced ginger, minced garlic, and sesame oil to make the dressing.
  • In a large mixing bowl, combine the cooked and cooled green tea noodles with the julienned cucumber, carrot, and sliced green onions.
  • Pour the dressing over the noodle and vegetable mixture and toss well to combine, ensuring the noodles are coated evenly.
  • To Serve:
  • Slice the sesame-crusted tuna steaks into thin strips.
