Here is a healthier way to make gingerbread cookies this Christmas.

  • 1 large egg
  • 1/3 cup coconut oil
  • 1/3 cup maple syrup
  • 1/4 cup organic molasses
  • 1/2 tsp vanilla extract
  • 1 tsp ground dried ginger
  • 1/2 tsp cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 1/4 cups whole wheat flour


  • Preheat oven to 350 degrees F and line a baking sheet with parchment paper or a silicone baking mat.
  • In a large mixing bowl, gently beat the egg. Add coconut oil, salt, maple syrup, molasses, vanilla, ginger, cinnamon, nutmeg and baking soda. Whisk until well combined. Add flour and mix until the dough becomes very thick. Transfer onto lightly floured surface and use a rolling pin to roll it out evenly to 1/4 inch thick.
  • Use a cookie cutter to cut into your desired shapes. Bake for 12 minutes and then let cool.
