This simple salad is filled with fresh and vibrant flavors.
Jicama & Mango Salad
- 1 medium jicama
- 2 small cucumbers
- 3 ripe mangoes
- 1/4 cup fresh cilantro, roughly chopped
- 2 tsp chile powder
- juice of 2 limes
- Kosher salt, to taste
- Peel the jicama and cut into long thin strips. Slice the cucumbers in half lengthwise, remove the seeds and then cut into strips. Peel the mango and then cut into strips. All three ingredients should be cut into similar size.
- In a large bowl, mix together the cucumber, jicama and mango. Add cilantro, chile powder and lime juice. Toss to combine. Season with salt, to taste.
